Cookie Baking Day







Katie and I had planned on making cookies yesterday, but with my having to take Cammy to the Vet, I told her I would have to let her know. So when I found out that Cammy was going to be fine, I decided that I wanted her to come over after all and spend the day with me. I needed someone around. I didn't want to be alone. She picked up lunch and showed up ready to bake. We had a nice day just chatting and baking. At 3:00 I went and picked up Cammy. I had to give her a little sponge bath because she had wet all over herself right when the vet tech was getting her to put her in her carrier. She told me that she cleaned her off as best she could. Cammy was really smelly and the kittens were freaking out. I bathed her and dried her off with the hair dryer on low. She did not like it but was still to drugged to fight it. She was a growl'n though. Poor thing. But I was not about to let her sit around wet when she is so skinny and frail. I had the heaters on in the house, but it still is kinda cold in the back rooms. She was doing well when I gave her some medicine last night. She took it no problem. **deep sigh** I'm so glad she is still with us.



Katie and I made sugar cookies and tried a new cookie recipe. Cracker Jack Cookies. They are freaking awesome! Not sure it Katie even knows what a cooked one tastes like since she spent the entire time eating the dough. I get so grossed out when someone eats cookie dough. I hated it so much when she would steal the dough as a kid that every time she did it I would say "You're gonna get worms. And then you will have worms crawl out your butt." Yep...I said that to my kid. Often. So yesterday she was licking her hands, yes hands not fingers, and said to me "You know, with all the cookie dough I have eaten over the years, I have never had worms crawl out my butt." Made me laugh. I told her that OK maybe you don't get worms from cookie dough but you can get salmonella! I'm sure she still didn't care.



Here is the recipe for Cracker Jack Cookies. I hope you will try them!



1 cup shortening 1 tspn baking soda



1 cup brown sugar 2 cups rice krispies



1 cup white sugar 1 cup coconut



1 tspn vanilla 1 cup unsalted spanish peanuts



2 eggs 2 cups regular uncooked oatmeal



1-1/4 cup flour



1 tspn baking powder



Cream together the shortening and sugars. Add vanilla and eggs and mix well. Sift together the flour, baking powder, and soda and add to mixture. Add rice krispies, coconut, peanuts and oatmeal and stir to mix. Drop by spoonfuls onto cookie sheet. Bake 350 degrees for 15 minutes. Check for doneness after 12. (I don't think we cooked them longer then 12-13 min) You can also cook them for 10 min in a convection oven.



They turned out kinda crunchy/chewy. And YUMMY!

I eat cookie dough also. I lick the spoon when making a cake. I did not know this was a no no.LOL! I used to eat raw potatoes when I was a child. My Mother thought that was icky but I always did it anyhow. I still eat cookie dough and lick the spoons when I make my cake batters. That's the fun part!!!
Hi Adri..where ever you are today...LOL. I left you a message on Twitter about the snow. I have Twitter set up with spyware and I get e-mails letting me know who has been on my account. ;)Ross was on it twice to read my updates which I found adorable. I blocked a second person who has no business with their obsession to follow me. I don't think I look like Paula Abdul. Don't get me wrong. That situation was very sad for all involved.
I am heading out now to visit my parents and go Christmas shopping. Tonight we are going to Jason's Deli. love their chicken pot pie soup! Then we plan to get a movie and stay inside because it is going to be frigid tonight and we don't do freezing temepertures. very well. Brrrr!!!

Barb you can ignore the question I asked about the cookie Katie was holding. I saw your pictures on myspace and that explained it for me. But where on earth did you get the cookie cutters from?

Shirley....LOL! Yes that is a Ralphie cookie! When we frost them he will be pink! I bought them in a special edition dvd set of A Christmas Story. It came with the dvd and cookie cutters and an apron which I just remembered about and did not wear yesterday

I will have to wear it Saturday for round 2 of cookie baking! Katie and her friend Mara are coming over to make more Ralphie cookies, and choco chip and oatmeal! Yummy! I still have a couple more rounds of baking that I will have to do, ending with fudge. I like that to be really fresh! I do both choco fudge and peanutbutter. I loooooove peanut butter fudge! As for substituting walnuts for the peanuts, I really don't see why not. I would just make sure the walnuts are chopped and not big half size ones. The batter is really crumbly and I think if the walnuts were too big it would be harder to work with. I ate one this morning for breakfast. Was that wrong???
Hi Dreama! I will keep an eye out for Bebbi today. I like to lick the cake batter too. I just have never liked cookie dough. I have a friend that goes to the beach with work buddies and she makes a batch of cookie dough for them to snack on all weekend. Sooooo gross! LOL!

I have been known to eat some cookie dough in my day but I wouldn't make some as a snack to take to the beach with me. I guess, whatever floats your boat! Lol!

The walnuts I have are pieces so it should work out. I don't have all the stuff right now but I would like to make them sometime. Have you ever had a hermit cookie? We use to make them in the bakery I worked in. They had raisins and nuts and coconut in them. If I can find a recipe I'll send it to you. We also made icebox cookies at christmas time. They had mixed fruit and cherries in them. You had to chill them over night. They were a real nice cookie too.

Ingredients:
1/2 cup vegetable shortening
1 cup brown sugar, firmly packed
2 eggs
2 cups sifted all-purpose flour, sift before measuring
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
2 cups raisins, chopped
1/2 cup chopped walnuts or pecans

Preparation:
Cream shortening; add sugar and eggs one at a time; beat until light. Sift together flour, baking powder, salt, cinnamon, cloves, and nutmeg; add to creamed mixture. Fold in raisins and nuts; mix well. Drop by teaspoonfuls onto greased baking sheets. Bake at 350° for about 10 minutes.
Makes about 4 dozen Hermit cookies

I. just. returned. from. ToysRUs. HELP!! I need to take some Advil and get a hot cup of tea and then I will think about cookies.

I just love that Katie comes home to bake cookies with her mom. I hope my daughter will do that too. For now though, since she is only 9 she is pestering me to bake cookies every single night of the week.

Back in a few. Need Advil NOW!

I will never go to a Toys-R-Us again as long as I live! Especially at Christmas! I used to love going there at Christmas time to get stuff for the kids. Like when the Cabbage Patch Dolls came out and I had to get one for Katie. Or her My Little Ponys, and Bryan's Ghost Busters stuff. Fun times. But now, no way could I take the crowds of a TRU. You have my sympathies.

Shirley, I think my mom used to make icebox cookies. She lost all of her recipes years ago when my sister moved out and took the book with her, then moved back home leaving the book behind with the jerk she broke up with. Most likely he threw it away.

OK, it took awhile for me to recover, but I think an eggnog will take care of that!

And before I go any further, HELLO to Dreama, Adriana and Shirley... and of course, Barb! Sorry I didn't say hello earlier. I was sorta out of it.

I AM going to make those cookies Barb! I was given a bag of coconut at our last Girl Scout meeting and I didn't really know what I wanted to bake with it. Now I know!! I love me some rice crispies and oatmeal... so it sounds like a winner!

Since I know you are dying to know **snicker** the other items on my holiday baking list include:
~Peanut Brittle (SO easy when made in a microwave oven!)
~Homemade Marshmallows
~Reindeer Noses (small pretzel with a Rolo candy baked on top and then an M&M smooshed on top)
~Reeses Cup Peanut Butter cookies
~Spritz cookies
~Pretzel Rods dipped in chocolate
~Rugulach (sp??)
...and now Cracker Jack Cookies!!

This weekend we are expecting a hard freeze, so I plan to have all my baking supplies ready and keep the oven on all day.

My mother told me that eating raw potato would give me worms, though she never mentioned them crawling out my butt. That sounds like something I would tell MY kids though. LOL!!

OMG G! You crack me up!

I really like these Cracker Jack cookies. I think I have said that about 100 times in the past 2 days. I'm a little obsessed! How funny that you mentioned pretzel rods dipped in chocolate. I bought those yesterday to do too! I have the white and dark chocolate. I also bought big thick regular twisted pretzels to dip. I have never heard of Reindeer Noses. Does the Rolo end up melting all over the pretzel or does it stay intact and just gets soft??? Enquiring minds want to know!

Ok - so I am not just finishing my test but I did just now get to the blog :)

Can I just say first... I'M DONE!!! I'm still waiting to find out my grade and, of course, get my degree in the mail...but that'll be in January, I assume.

Second, HI BARB AND DREAMA AND GLYNIS AND SHIRLEY (who I don't know LOL)

Ok, now Barb - you're welcome for the kind words. I'll tell you to just cherish every minute with Cammy. I didn't know she was going to pass away, but I know I loved her every minute of her life up until her final moments because I yelled to her "I LOVE YOU CALI" as I left the house the day she passed. Just love her because when the time DOES come - you'll know she was happy.

OMG you're making me hungry with all of these recipes and I wish my mom was the baking kind, but she's so busy. Though, I do think she likes to. I will have to see if she wants to after she's off for Christmas. I love when she makes frosted sugar cookies. One year, I think it was 2 yrs ago, she spelled out Merry Christmas AND our names. That way we each had our own cookies! We each ate our name cookies. Granny and my Aunt Jane (or as she likes to be called, Tia Juana) usually bake most of the holiday cookies. We get those greek, powdered sugar cookies that are shaped like half moons, the peanut butter with mini reese cup cookies, and Hermits, too but the Hermits my granny makes have those red and green candied cherries, and you have to refridgerate them. I'm probably forgetting some. My mom makes a mean fudge too! I love goodies :D

I have to admit, again, that I love any kind of batter. Especially chocolate chip cookie dough (Thank God they made an ice cream LOL) and I love cake batter.... anything sweet LOL.

Also, since I have no job yet (but can now really really start looking career-wise) so I could bake myself LOL

I think I am going to try and finish the Harry Potter series now, which is something I've tried to do since they came out, but hadn't been able to finish because of school. There were also times that I had books to read for school that I didn't read but I wouldn't read the books that I wanted to read because then I'd feel guilty because if I have time to read fun books I could read assigned books :D

I also started reading WICKED and had to stop. So that is on my list too. I am also still sick, so I would like to get better already, but now I can just relax and focus on getting better.

Ok - this turned into a really long comment... Sorry Barb! LOL

Maybe I'll start blogging more often :D

OH - you can tell Katie that I'd lick my hands too if I had batter all over them (and Barb - no worms here either LOL) :-p
